Buthaytha

Story & History

Buthaytha is one of the oldest and most beloved desserts of the Emirates and the wider Gulf, born from the region's most treasured ingredients: dates, ghee and flour. Traditionally prepared by hand, the flour is patiently toasted until golden and nutty, then worked into soft, cardamom-scented dates until the mixture binds into a rich, crumbly sweet. Simple, nourishing and deeply tied to Emirati heritage, Buthaytha is served with Arabic coffee at family gatherings and celebrations, a true taste of the desert's generosity.

Occasions

Core Ingredients

  • Dates, approx. 2 cups, packed (320 g)
  • Ground cardamom, approx. 1 tbsp (8 g)
  • Ghee, approx. 2 tbsp (30 g)
  • Fine flour, approx. 1 cup (125 g)

Traditional Method Outline

  1. Prepare the dates (3 min): Remove all pits from the dates and ensure they are clean.
  2. Mix the date base (4 min): Add the ghee to the pitted dates and mix well. Sprinkle the ground cardamom over the dates and ghee, and mix until evenly distributed.
  3. Toast the flour (10 to 15 min): In a large pan over low to medium heat, toast the flour, stirring constantly, until golden brown. Do not allow it to burn.
  4. Combine (5 min): Pour the toasted flour over the date mixture and mix by hand until all ingredients come together and the mixture binds. The texture should be crumbly yet cohesive.
  5. Shape and serve (2 min): Transfer to a serving platter and shape as desired. Serve immediately or store in an airtight container.

Serving

Serve with Arabic coffee. Chef's notes: toast the flour low and slow; the golden colour and nutty aroma are the soul of Buthaytha, so stir constantly and never walk away from the pan. Add the toasted flour while still warm; the residual heat softens the dates and helps the mixture bind. The cardamom leads the aroma; distribute it fully through the dates before the flour goes in.
