Maleh
Salt-cured fish · المالح
Salt-cured kingfish — a preservation technique that became a beloved flavour in its own right.

Story & History
Before refrigeration, salting fish was how coastal families carried the sea's bounty into leaner seasons. Kingfish is cured and stored for months, then cooked into madrooba, salona or rice dishes. Maleh outlived its practical need because its deep flavour became part of the Emirati palate's memory.
